Weekly Garden Update
I know for some people Christmas is the most wonderful time of the year, but I think summer is maybe my personal favorite. Not the heat, but when the garden starts to produce, and everything starts to grow—it’s amazing!
Right now, we’re experiencing a heat wave, which means the weeds are getting a little too aggressive, but the produce is coming in strong! Just a few more days, and we should have squash and zucchini. Then it will be time for tomatoes and okra, and of course, green beans.
There’s just something so rewarding about planting a seed and then watching it turn into something you can enjoy for supper tonight and then all winter long!

As we harvest the vegetables and start watching the jars grow in the pantry, I love the reminder that there is a season for everything.

What’s on the counter this week?
This week, my husband and I headed out to harvest the first produce from the summer garden. I love using my white garden basket that my father-in-law gave me several years ago! If you don’t have one, you can buy a similar garden produce basket on Amazon of course!

We harvested several heads of cabbage that are fermenting on the counter in a large gallon glass jar. I can see a hotdog/sauerkraut meal coming up next week or so. And if there is enough, I’ll can a few jars to enjoy this winter.
We also picked our first cucumbers of the season. Hopefully, they’ll start coming in strong next week. That will mean pickling season starts!

Green bell peppers are doing well. I typically freeze them and store them back for fajitas and sausage/pepper/onion skillet meals.

This is my first year growing jalapeño peppers, so they are all being pickled to enjoy with nachos and hamburgers all year round.

I forgot to wear gloves when I was processing these peppers and I am paying for it. My hands have been tingling for hours. So do better than me – when you start cutting peppers, wear gloves!
