Easy Refrigerator Pickled Radishes
I’m not a super fan of radishes but I do love a crunchy pickle. Since the radishes in my garden are growing like crazy, I decided to try a small batch of pickled radishes this weekend. I’m not 100% sure I’ll make a big batch yet, but I was pleasantly surprised with how good they tasted. If you have extra radishes growing in your garden, then maybe you should try these pickled radishes. These are definitely beautiful and super tasty!

Easy Refrigerator Pickled Radishes
Ingredients:
- White vinegar
- Sugar
- Salt
- Water
- Peppercorns
- Radishes
Directions
Wash and slice your radishes. You need enough to fill 3-4 small jars.
Mix your ingredients and bring to a quick boil.
- 1 cup white vinegar
- 1 cup water
- 2 TBS sugar
- 1 TSP salt
Pour your brine over your sliced radishes. Add about 1/8 tsp of peppercorns to each jar.
Store in the refrigerator and enjoy. These pickled radishes were ready to eat after chilling overnight. They are said to last up to 4 months when stored in the refrigerator.
***Something to note: Pickled radishes have a strong smell when you first open the jar b don’t let that keep you from enjoying them. Once you get past the first smell, they taste really good.
