Easy Jambalya for the family

A few months ago our family went to a Food Taste Experience in Lexington. It was an opportunity to taste foods that we don’t traditionally fix at home. One of the foods that we discovered was the Cajun dish Jambalya. Since we are members of eMeals and get new recipes delivered to my inbox each week, I was excited to find that Jambalya is not only easy to make at home, but also quite healthy!

Easy Jambalya in 15 Minutes

Ingredients

2 Celery Stalks
3 Green Onions
1 tsp Cajun seasoning
2 Cloves of Garlic
Polish Sausage
Frozen, cooked Shrimp
Instant Rice (as much as you need to feed your family)
1/2 Cup Black Beans

Directions

Chop the celery, green onions and garlic.
Saute them in the oil of your choice till they are slightly browned.
Add sliced Polish Sausage
Add frozen shrimp (make sure it has no tails)
Cook down low till hot

Cook Rice according to directions
Add rice and beans to the mix

Add more or less rice and beans to get the consistency you like best. We like to use the whole can of beans and more rice than the recipe calls for. This is a hit in our family and we love having leftovers!

  2. Jambalaya- my talented husband, who can make ANYTHING- well, jambalaya has been his nemesis. This recipe looks like even I can make it!!! LOL, we would love to try emealz.
