Creamy Vegetable Soup for Cold Days

What’s better than a creamy vegetable soup on a cold Fall day? I have fixed many pots of vegetable soup over the past 20 years, but this past week my husband fixed the best vegetable soup ever!

We were watching an episode of KY Proud with Brigitte where she was making a Lentil and Sweet Potato Soup. It looked so good and tasty, but we didn’t have all the right ingredients. So my husband started pulling out ingredients from the cabinet and created this great creamy vegetable soup.

Creamy Vegetable Soup for Cold Days

I didn’t realize it was going to turn out so good, so I didn’t write down our ingredients or measure how much we used.

Ingredients

  • 1 Potato
  • 2 Green bell peppers
  • Handful of chopped carrots
  • 1 Onion
  • Chicken Broth
  • Frozen Tomato Sauce/Juice from last year’s garden
  • Spices to taste (I’m not sure what all he pulled out, but just use your favorite spices)

Directions

We boiled it all down till the carrots were soft. Then we poured it all in our blender and pureed it till was a creamy base. Let it simmer on the stove for a little while longer.

If you are watching what you eat, it doesn’t get much healthier than this soup. We didn’t use any milk, heavy cream or high calorie ingredients – just vegetables from the garden, some spices and chicken broth.

Top with shredded cheese or a little drop of sour cream. This creamy vegetable soup was a hit! I even had enough left over for lunch the next day!
