Family Favorite Bran Muffins

Every family has certain foods that have been passed down from one generation to the next. There are some families who have traditional soups, desserts or lasagna recipes. One of the things that I have grown up loving is a bran muffin recipe that my grandmother would make. Then my Mom made it for us regularly when we were growing up. I even remember her making up a big batch of the muffins so I could take them back to college. They’re super easy to make and have some great ingredients that are good for our bodies. Plus some brown sugar that just helps them taste great! Today I decided to tweak the recipe just a tad and use Lifeway Kefir instead of buttermilk to see if I could add a little more health benefits to our family favorite bran muffins.

Family Favorite Bran Muffins

Making these bran muffins is not rocket science. If it was super tough, I wouldn’t be able to make them. It’s as simple as gathering all your basic ingredients to get started. I love the fact that I’m able to serve my family All Bran, Shredded Wheat and oats in a simple muffin that actually takes good. By switching out the buttermilk and using Lifeway Kefir instead, I am adding even more healthy options.

Tip: Always use the right kind of flour when you create a recipe from scratch. In the past I have tried to save myself a trip to the grocery when I ran out of all-purpose flour and just use self-rising instead. It never gives the results that I want. This recipe calls for all-purpose, and I’ve learned my lesson!

Tip: Make sure you use a muffin pan that is in good shape. A new muffin pan makes it so much easier to serve up beautiful muffins for your family and makes clean up a breeze!

Ingredients

  • 2 Cups Instant Oats
  • 2 Cups All Bran Cereal
  • 2 Cups Shredded Wheat (crushed)
  • 1 Cup Vegetable Oil
  • 1 Quart Lifeway Kefir (Plain)
  • 5 tsp Baking Soda
  • 5 Cups Plain Flour
  • 2 Cups Boiling Water
  • 2 1/2 Cups Brown Sugar (packed)
  • 4 Eggs
  • 1 T salt

Instructions

  1. Mix the three cereals together into a bowl.
  2. Add the boiling water to the cereals
  3. Add Vegetable oil, sugar and eggs to the cereal mix
  4. In separate bowl, sift dry ingredients together
  5. Alternate adding in dry ingredients and Kefir to the cereal mixture
  6. Beat well
  7. Cook for 15-20 minutes at 400 degrees (depending on your oven)
  8. Eat hot or snack when they are cold.
  9. Refrigerate extra batter for future meals.
